Rice and Cod
Ingredients (4 people):
400 gr. Round rice
3 tails of dried salted cod
150 gr. Of gut of cod
3 cloves of garlic
1/4 red pepper
2 choriceros peppers
Extra virgin olive oil
1 cayenne pepper
1/2 teaspoon of hot paprika
Elaboration of the recipe of Rice with Cod:
Put water to heat in a large casserole. When it begins to boil, add the stalk of the scallion, a few parsley branches and the cod tails. When the water boils again, remove the fish and remove it.
Strain and reserve the cooking broth. Rinse the guts of cod and drain them. Reservation.
Chop the garlic, chives and red pepper and put them to pochar. Soak the choriceros peppers in a bowl with hot water. Remove the meat, finely chop it and add it to the pan.
Add cayenne pepper and paprika and sauté a little. Incorporate the broth (3 parts for each part of rice), rice and cod (without skin). Add salt and cook for 18-20 minutes. Cover with a clean cloth and let stand for a few minutes.
Slice cod guts, flour in flour and fry in a frying pan with hot oil until golden.
Serve the rice with cod and accompany it with the guts of cod. Garnish with a parsley branch.
